—————————————
***(The name Chianti may derive from the clangor of horns used to frighten game during hunts in medieval times. Vast forests of oak and chestnuts were cleared to cultivate vineyards and olive groves here. The first vineyards were planted around the year 1000 but their development was hindered by the political situation for several centuries. Forever contested between the Florentine and Sienese republics, Chianti was the theater of endless battles with castles and farms plundered, fields and vineyards devastated. Those villages, monasteries, new castles and fortresses that later appeared became villas and country residences in more tranquil times. The name Chianti Classico first appeared in 1398. In 1716, the Grand Duke Cosimo III recognized its denomination of origin. Its fortune may in part be linked to the rustic aspect of its fiasco or flask covered in fen grass which dates back to 1200, a form having origins in recipients used during Greek and Roman banquets. When the Baron Ricasoli studied and perfected the blend of grapes in the 19th Century, Chianti became synonymous for Italian wine. During the American prohibition, it was even exported as a restorative tonic. Its consortium is the oldest in Italy, choosing the same familiar symbol of a black rooster on gold background used by the 14th Century league Chiantigiani or by Giorgio Vasari in his decorative motifs in the Salone del Cinquecento in Florence's Palazzo Vecchio. In 1996, an independent DOCG classification was finally granted for Chianti "Classico," ending years of the consortium's struggle to gain recognition and end the confusion with other Chianti appellations in Tuscany.)
